I don’t usually love marshmallows but when you drown them in melted peanut butter and chocolate you seriously cannot go wrong! There are many variations of rocky road recipes that you can experiment with depending on what your taste is. If you prefer a little extra crunch in your sweet treats you can add in cookies or sprinkle them with nuts. I am personally all about smooth textures so I prefer making this rocky road recipe with just the smooth peanut butter and melted chocolate chips, but you can mix it up however you like! 1/2 cup margarine
1/2 cup peanut butter
2 packages chocolate chips
1 package mini marshmallows


1. Melt the chocolate chips, peanut butter and margarine in a microwavable bowl or on the stove in a sauce pan.

2. Fill the bottom of a 9×13 dish with marshmallows; pour the chocolate mixture over the marshmallows and let cool.

3. Store these rocky road squares in the refrigerator until ready to serve.

You can line the baking dish with parchment paper but I find that the margarine in the chocolate mixture helps keep them from sticking.
