Peach Freezer Jam

Hello everyone, I’m so excited to be back in the blogging world! I had a super busy summer and unfortunately my blog took the back burner.  I’ll do my best to give you a brief recap without getting too long-winded! So let’s rewind to May when it all started– I finally made my way across the stage and graduated from university with my Bachelor’s Degree finishing off with a Psychology major and a Gerontology minor. It felt pretty great to wrap up my degree and make the transition into what I like to call, “the real world”.

Just after graduation I started a new job and I have to admit, I was a little sad to give up my part-time job. It was a big step and I was nervous to venture into a more professional role but I am so happy that I did! I never would have guessed that working for a financial institution would be the first career path that I would take but I must say, I’m really enjoying it. I really do feel like the possibilities for my career are endless and I’m excited to see where this journey takes me.

Although I’ve had a busy few months, there have been exciting projects along the way that I can’t wait to share with all of you! How about we start with this delicious peach freezer jam recipe?

Growing up my Nan always made delicious peach freezer jam and I thought I’d never be able to master it on my own. Turns out, it’s only half as hard as I thought it was 😉

All you need is a few baskets of peaches, some mason jars and this magical powder called instant PECTIN! You shouldn’t have any issues finding it at your local grocery store. Here’s the Club House brand that I used:

Garden Fare

Club House No Cook Freezer Jam

This peach freezer jam is great because it doesn’t involve sterilizing and canning, it’s as simple as mixing up the fruit with the garden fare and sugar and pouring it into your freezer-safe jars.

Mason Jars

 


Ingredients:
4 cups finely chopped peaches
1 1/2 sugar
1 package gelling powder


Directions:
Boil water and drop peaches into water for 2-3 minutes to loosen skin. Let the peaches cool and gently peel skin off.  Mash peaches with  masher or place in a food processor until you have roughly 3 1/2 cups of peach puree.

Gently stir in sugar with peach puree and allow to stand for 15 minutes. Slowly sprinkle gelling powder a little at a time into the peach mixture while stirring for 3 minutes. Allow to stand for 5 minutes then gently stir again for 1 minute.

Pour jam into jars leaving 1 inch head space and seal tightly.


Notes: 

Jam is ready to eat right away, no standing time is required. If stored in refrigerator use within 6 weeks or store in freezer for up to one year.
